Lemon garlic chicken kebabs – the name of this recipe is much trickier than the method, I promise you. I’m sure you’ll love this dish. If you follow Slimming World guidelines, you can also have it as a Slimming World chicken kebab.
It is easy to make for the BBQ or on the grill. If you have a George Foreman-type grill or teppanyaki this can easily be cooked on that too!

Making this a Slimming World chicken kebab
If you are looking for the syns in this recipe then the only syns are in the olive oil. You can reduce the amount of olive oil. Alternatively, you can omit it and add a little water. It will change the taste slightly but if it helps your plan this week then the choice is yours.
Olive oil is synned at 6 syns per tbsp (approx). This recipe serves four portions. It requires four tablespoons in total. Therefore, each portion is approximately six syns.
Step-by-step instructions for this recipe
Place all ingredients except the chicken in a large bowl and mix them to combine well.

Cut your chicken into cubes of about 1 inch and pour the marinade over the chicken. Rub well to ensure all chicken pieces are well coated.

For better flavour, cover and let it marinate for at least an hour, up to 24hrs or overnight in the fridge. Can also be frozen marinated.
Once marinated or coated, start skewering pieces of chicken into bamboo skewers.

Place chicken in sticks and grill on medium heat until charred then flip over. Once their charred on both sides and perfectly cooked inside, serve hot.

Can be served with your favourite dip, in a tortilla, in a pizza bread or with salad or on their own!
The best way to cook the kebabs
There are a number of methods you can use to cook these kebabs. All will give you a similar taste but a slightly different appearance.
If you want to BBQ these kebabs then be sure to check that they are thoroughly cooked to reduce the risk of food poisoning. It is easy with BBQs to cook at too high a heat and heat the outside but not as well into the middle.
To cook these kebabs under the grill be sure to turn them halfway through cooking. They will burn easily if you are not careful.
To cook chicken kebabs on an electric grill such as the George Foreman grill be careful to ensure the end pieces of chicken are thoroughly cooked as sometimes those at the ends take a little longer to cook.
Did you know you can air fry chicken kebabs? They will cook just as well but not have a charred appearance.
If you are air-frying your chicken kebabs remember to check the length of your skewers! Either use smaller skewers or simply cook the chicken pieces loosely instead of on a skewer!

Easy adaptions to try
These lemon garlic chicken kebabs could easily be made with pork instead of chicken for an alternative flavour.
Another meat this recipe would be perfect with it turkey, especially if you buy it cheap in a post-Christmas sale!
If you are vegetarian these chicken kebabs could be made as Quorn kebabs or tofu kebabs easily. Tofu doesn’t skewer as well and splits easily so be sure to use firm tofu and cut it into larger pieces than you would for chicken.

500g chicken breast
4 tbsp olive oil
2 tbsp lemon juice
1 tbsp apple cider vinegar (or white vinegar)
2 garlic cloves, mashed
1 tsp dried oregano
1 tsp sumac
2 tbsp chopped fresh parsley

Optional: 2 tbsp fat-free natural yoghurt
