Sweet potato quesadilla recipe with spinach for weight loss
I love quesadilla and it is perfect for weight loss. It was provided to me to share with you by eye health expert Essilor who shared some useful information about eye health.

Nutrients in the quesadillas
Sweet potatoes and spinach are both essential sources of vitamins and minerals that promote eye health.
Packed with beta carotene, the body converts beta carotene in sweet potatoes into vitamin A, a nutrient that helps prevent dry eyes and night blindness.
Beta carotene and vitamin A also may help reduce the risk eye infections.

How to make this quesadilla healthier
By using low-calorie cooking spray instead of oil you can save some calories without changing the taste.
Why not also add some salad or steamed broccoli to make this even healthier as well as yummy?

Comfort eating
Instead of eating out making a tasty meal like this could be perfect as you stay on plan whilst also enjoying a good meal. Much healthier than alternatives in most restaurants.
It is easy when you are trying to lose weight to fall into the trap of comfort eating when you are feeling down. You do not need to just snack on fruit and vegetables to be healthy there are so many other alternatives.
If you find that you are regularly feeling down and snacking then maybe you need to address this as possible depression and consider seeing your GP. We all have struggled every now and then so it really isn’t something to be ashamed of.
Another option instead of eating at all could be to find something else to do instead of eating when you are feeling down. Give it some thought and see if you can come up with any strategies to help yourself.

Description
This tasty sweet potato and spinach quesadilla can be made healthily. Easy to make and absolutely delicious.
Ingredients
100g sweet potato
2 tortillas
100g spinach
1/2 jalepeno chilli – chopped
1 teaspoon of ground cumin
1 garlic clove – crushed
2 tablespoons of vegetable oil
Salt and pepper for seasoning
Instructions
Pierce the sweet potatoes and cook in an oven at 200°c for 50 minutes, or until soft
Let the potatoes cool and scoop out the inners
Heat some of the oil in a large frying pan and add the garlic, heat for 1-2 minutes until brown, add the sweet potato flesh, spinach, jalapeno and cumin
Cook for 10 minutes stirring occasionally, season accordingly
Spread the filling on one-half of each of the tortillas and fold shut
Brush with oil on each side and cook on a hot griddle pan for 3 minutes or until brown.
Notes
Using low calorie cooking spray helps reduce the calories of this meal.

How many syns on slimming world plan is this?
If you use spray oil such as frylight then it is just the syns in the wraps you use which vary a little depending on the size and brand. There are a few Bfree ones I believe that you can have as a healthy extra b choice so it is worth checking that too.
If there’s ever been a time when I’ve prayed my kids wouldn’t like a meal I’d cooked for myself, it was this… ha ha! Too good to share. Loved the flavours in this quesadilla.
